Ingredients
- 1 Bunddle of Asparagus
- 1 pint Rhine wine
- 8 Eggs yolk
- 3 tbsp butter
- 1 tbsp Salt
- Pinch of sugar
Instructions
- Cook the asparagus until tender as directed in No. 15, then whip in 1 pint of Rhine wine the yolks of 8 eggs, 3 tablespoonful’s of butter, a little salt and a pinch of sugar in a double kettle to a thick sauce.
- Serve the asparagus on a hot platter with this sauce poured over it.
