Meat Pudding a la Zurich
Suet pastry, a lean stewing beef, and a thick, rich stout sauce are all used in this traditional British dish. Serve with fresh greens and creamy mash.
Ingredients
- 1 pound Chopped meat
- 3 ounces Chopped pork fat,
- 1 tbsp Fine herbs,
- 2 tbsp Capers
- Chopped pickle, salt, pepper, and four eggs,
Instructions
- Mix with 1 pound of chopped meat 3 ounces of chopped pork fat, 1 tabledpoonful of fine herbs, 2 spoonfuls of capers,a chooped pickle, salt, pepper and four eggs,
- Mould ina round pan or other vessel and cook for 1/2 hour in a double kettle. Leave it over night and the next day turn it ut of mould and serve with a brown or Remoulade sauce.
- It cab also be covered with meat jelly and is then served with olive oil, vinegar and mustard.
